It was after the late Meiji period that noodle dishes made from flour became widely known in Okinawa. The Chinese soba restaurant, which Chinese cooks opened near Tsuji Yukaku in Naha, is believed to be the direct roots of today's Okinawa soba. Since the beginning of the Taisho era, Okinawa soba shops have increased in the city, and the general public can easily eat it. At first, it was a soy sauce-flavored soup based on pork dashi (Shiyu soup), and the ingredients were only pork and green onions, which seemed to be the same as China soba in mainland Japan. Since then, improvements have been made, and the soup has become as thin as it is now, and it is said that Okinawa soba's unique style of using three meats, Okinawa kamaboko, and onion as ingredients, and red ginger and colegs (Island pepper pickled in Awamori) are used as condiments.
