Okinawa soba Tips

It was after the late Meiji era that noodle dishes made from flour became widely known in Okinawa. China soba shop opened by Chinese cooks near Tsuji Yukaku in Naha, is thought to be the direct roots of today's Okinawa soba. The number of Okinawa soba shops has increased in the city, and the general public became able to eat easily since the Taisho era. Initially, it was a soy sauce-flavored soup based on pork dashi (Seiyu soup), and the ingredients seemed to be the same as Chinese soba in the mainland of Japan. After that, the soup became light as it is now, with three pieces of meat, Okinawa kamaboko and green onions as ingredients, and uses red ginger and colags as a condiment. It is said that Okinawa soba's style has been formed.
