Okinawa soba's knowledge

It was only after the late Meiji era that noodle dishes made from flour became widely known in Okinawa. The Chinese cock opened near Tsuji Yukaku in Naha is believed to be the direct roots of today's Okinawa soba. Since the Taisho era, the number of Okinawa soba shops has increased in the city and the general public can easily eat it. Initially, it was a soy sauce-flavored soup based on pork soup (Shiyu soup), and the ingredients seemed to be the same as Chinese soba in the mainland of Japan, with only pork and green onions. It is said that Okinawa soba's unique style has been formed using three pieces of meat, Okinawa kamaboko, and onion as ingredients, and red ginger and colagues (awamori pickles of island chili pepper) as condiments.
