What kind of alcohol is Awamori?
There are various theories about the history of awamori, but it is said that the distillation technology of liquor developed in West Asia in the early 13th century was transmitted from China to Ryukyu via Siam (Thailand). "awamori" was presented to Asian countries as a tribute to trade.
Later, during the Kingdom of ryukyu era, only Sanka Shuri (Sakiyama, Akata, Toribori) were allowed to manufacture and strictly managed. In the Meiji era, Kingdom of ryukyu became Okinawa Prefecture, and it is said that awamori was built in the private sector, and there were about 760 liquor stores.
Later, the awamori industry was severely damaged by the Pacific War and other factors, but the strong will of the people of the prefecture restored awamori to the present day.
Except for some brands, indica rice (slender rice) is mainly used for raw materials. Compared to tenacious Japanese rice (Japonica type), it is harder and smooth, so black koji mold makes it easier to stretch mycelium.
The raw rice is made into rice koji using black koji, and water and yeast are added to it to make moromi. And for about 2 weeks, I will drink alcohol. This process is called "all koji preparation" and is unique to awamori. awamori and authentic shochu (so-called Otsu type shochu) are made by a single distillation machine. It is made by a distillation method that gives the individuality of raw materials, koji, and moromi moderately into sake and gives each characteristic.
And only Awamori made in Okinawa Prefecture can be displayed as "Ryukyu awamori".

The biggest attraction of awamori is that you can sleep.
The great attraction of awamori is that if it matures over the years, it will grow into a wonderful old sake.
Putting it in a jar or bottle and aging it is described as "laying it down." When awamori is laid down, the sweeter the scent becomes as you sleep, and the softer the texture when you put it in your mouth.
When Admiral Perry, who led the Black Ship, visited Kingdom of ryukyu in 1853, he said, "It's like a French liqueur." It will be a famous sake that can be on par with modern whiskey and brandy, which are acclaimed worldwide even today.
The charm of awamori is that it grows into old sake by aging. Over the years, awamori is prized as "Kosou" in Okinawan dialect. It has a sweet and rich taste that can be laid over time, and awamori old sake is fascinated by the depth of taste.

Delicious way to drink Awamori
The basic way of drinking Awamori is "straight" and "water splitting". awamori's alcohol content is more than 30 degrees, so if you have a strong drink, straight may be better. However, be careful not to drink too much.
If you want to eat it with a dish, we recommend "water splitting". Drink the water in a glass filled with ice, and awamori 2: Water 8 ratio or if you have strong alcohol, please drink it as you like.
