How was the "How to Enjoy locally brewed sake in Okinawa [awamori]" introduced on my blog last time?
Continuing from last time, I would like to convey the greatest charm of Ryukyu awamori.

The charm of awamori is the sake that grows into old sake by aging. The old sake culture has taken root in Okinawa, and the old awamori sake is attracting attention. It takes time like wine and whiskey, and after years and decades, new value is created.
Those that have been aged for more than three years are prized in the Okinawa dialect as "Koshu". The sweet scent and rich taste as you sleep over time, and you will be fascinated by the depth of the taste of awamori Koshu.
September 4th is 'Koshu Day and Shigi Day'
In 2000, "Koshu Day Festa 2000" (sponsored by the executive committee) established September 4 as Koshu Day. It is said that 200 years old and 300 years old sake (cous) existed during the Ryukyu dynasty, but it was all lost due to the Battle of Okinawa. The old sake was managed by the Ryukyu Kingdom and was a noble sake.
"Koshu Day" is an anniversary established in the hope of reviving the culture of cultivating old sake (cooth), which can be said to be the treasure of Okinawa, and hope that peaceful days without war will continue. You can grow old sake for 100 or 200 years at home, and awamori Koshu is one of the most famous sakes in the world.
And in 2022, it was newly established as the "Day of Service". Old sake, which is the charm of awamori, is said to grow in order, and it is a historical method of cultivating old sake, but there was not enough information about the actual situation and quality that was conveyed through secrets and oral traditions.
Generally, "Shijigi" stores awamori with different manufacturing years in multiple jars, and when using some of the old sake with long storage years, the sake is added in order from old sake with close storage years. Through this process, the flavor of parent sake (oldest) is not impaired, and you can enjoy decades of old sake.
