I would like to share the greatest appeal of the Ryukyu awamori.

The charm of awamori is that it grows into old sake by aging. The old sake culture has been established in Okinawa, and the old awamori old sake is attracting attention. Over the years and decades of time, like Western sake such as wine and whiskey, new value is born.

Those aged for more than three years are prized as "Kosou" in the Okinawa dialect. It has a sweet scent and rich taste that can be laid over time, and is fascinated by the depth of taste of awamori old sake.

September 4th is "Old Sake (Coos) Day / Service Day"

In 2000, "Old Sake Day Festa 2000" (sponsored by the executive committee) established September 4 as Old Sake Day. It is said that 200 or 300 years old sake (cous) existed during the Ryukyu dynasty, but it was all lost due to the Battle of Okinawa. The old sake was a noble liquor managed by the Ryukyu Royal Government.

"Old Sake Day" is an anniversary set in the hope of reviving the culture of nurturing old sake (cous), which can be said to be the treasure of Okinawa, and hope that peaceful days without war will continue. awamori Koshu is a famous sake that can grow old sake for 100 or 200 years at home and is unparalleled in the world.

And in 2022, it was newly established as the "Senior Day". The old sake, which is the charm of awamori, is said to grow in order and is a historical old sake cultivation method, but there was not enough information about the actual situation and quality transmitted through secrets and oral traditions.

Generally, "Service" stores awamori with different manufacturing years in multiple jars, and when using some of the old sake with longer storage years, it is supplemented by adding sake from old liquor with similar storage years. Through this process, the flavor of parent liquor (oldest) is not impaired, and you can enjoy several decades of old liquor.

awamori can be aged in a bottle, but in order to enjoy old-fashioned sake, we recommend a jar.
